homemade scones

This past sunday I had a craving for a yummy scone and a cup of coffee...

I did not want to drive into town...

I know, I know, it sounds like I live in the country...I do not, but the base we live on is about 8-10 miles from starbucks, bagel shops, etc...

therefore I decided to raid my cabinets and make my own...

I was afraid they might now turn out, but i was WRONG! they were amazeballs!

I started with this basic recipe:

3 cups all-purpose flour

1/2 cup white sugar

5 teaspoons baking powder

1/2 teaspoon salt

3/4 cup butter

1 egg, beaten

1 cup milk

I added Pomegranate craisins, lemon zest and lemon juice. I don't think I added enough of either so I would do this:
1 cup craisins
Zest juice of two lemons
1.Preheat oven to 400 degrees F (200 degrees C). Lightly grease a baking sheet.

2.In a large bowl, combine flour, sugar, baking powder, and salt. Cut in butter. Mix the egg and milk in a small bowl, and stir into flour mixture until moistened.

3.Turn dough out onto a lightly floured surface, and knead briefly. Roll dough out into a 1/2 inch thick round. Cut into 8 wedges, and place on the prepared baking sheet. I tried this but the dough was super wet, it would not roll into anything, even after I added about 1/4 of flour. I just scooped blobs onto the greased cookie sheet.

4.Bake 15 minutes in the preheated oven, or until golden brown. I did not want them dry so I baked'em for 15 minutes and took'em out of the oven, I did not wait for the golden brown.  They were perfect!

I will be baking these very regularly, and probably trying a few different add-ins
