Rella's Recipes: Shrimp Tostadas

It is so good to be cooking again.

While I do not claim to be a fancy pants chef I do love to cook.

Earlier this week I made some pretty tasty shrimp tostadas. They were so good we had them two nights in a row!


2 tablespoons reduced sodium taco seasoning

juice of half a lime {keep other half for corn salsa}

2 tablespoons to water

12 large shrimp, peeled and deveined

4 6 inch baked corn tosadas {i love the CHARRAS brand}

1/2 cup spicy fat-free refried beans, warmed

Corn Salsa:

handful of grape tomatoes, chopped
1/2 avacado diced
1/2 can of black beans drained
1/2 can of corn drained

1/4 red onion diced

juice of half a line

1. wisk together taco seasoning, water and lime juice add shrimp and marinate in fridge {I let them marinate for about an hour or two}

2. Mix tomatoes, avacado, black beans, corn and red onion together. Add juice of half a lime. {I ususally add cilantro but hubs does not like cilantro}

3. Heat a skillet and spray with cooking spray. Cook shrimp 2-3 minutes on each side.

4. Spread each tortilla with refried beans, top with corn salsa and 3 shrimp. Serve with a lime wedge.

{this recipe is adapted from a weight watchers recipe. 1 serving here is about 6 points, I usually eat two for dinner}

Being down in Florida has Scott and I craving seafood 24/7.  These tostadas were so easy to make and perfect for a summer night.

Of course we had to add a Michelob Ultra Lime Cactus beer. Lime beer and summer is like cupcakes and frosting, they go together perfectly.
