Rella's Recipes: mozzarella stuffed turkey meatballs


Today I am sharing with you a new recipe I found, and love! So many of my instagram friends wanted the recipe, so here you go! Yummy mozzarella stuffed meatballs. I love these so much they will probably become a staple in the meal planning rotation.




Ingredients:

-8oz ground turkey

-1/2 cup grated Parmesan cheese

-1/4 cup Italian bread crumbs

-1/4 cup chopped parsley

-1/4 cup fat free milk

-1 large egg white

-1 garlic clove

-pinch of cayenne {I used more than a pinch for a spicy kick}

-4 mozzarella balls cut in half {the ones that are the size of a marble}

-2 cups fat free marinara sauce

-1/2 cup water

-8 oz of whole wheat pasta

-half a container of sliced mushrooms

-large handful of fresh baby spinach

1. stir together turkey, 1/4 cup of the Parmesan, bread crumbs, parsley, milk, egg white, garlic and cayenne in a large bowl. Shape turkey mixture around cheese cubes to form 8 large meatballs {originally recipe calls for 16 small meatballs but just made them bigger so I didn't have to roll 16}

2. Bring marinara sauce and water to simmer in large skillet. Add meatballs and mushrooms; cover and simmer, stirring gently a few times, until cooked through 10 minutes for smaller meatballs or about 15-20 for larger meatballs.

3. While meatballs are cooking cook pasta according to package.

4. Add spinach just before meatballs are done {cook for 1-2 minutes}

5. Serve meatballs, mushrooms and sauce over noodles, use the rest of Parmesan cheese.

this recipe is adapted from Weight Watchers and is meant to feed 4.

{keep meatballs at a low simmer, if you allow them to go to a vigorous boil the cheese will come out of the meatball}
